Creamy Tomato Tortellini Soup

Creamy Tomato & Tortellini Soup:

Ingredients:

  • 1 Tbsp Extra Virgin Olive Oil (EVOO)
  • ½ lb. Italian Sausage
  • 1 Diced White Onion
  • 24oz Organic Marinara Sauce
  • 8oz Reduced Fat Cream Cheese
  • 32oz Reduced Sodium Chicken or Vegetable Broth
  • 8oz Diced Bella Mushrooms
  • 4-5 cups Fresh Organic Baby Spinach
  • 16-20oz Frozen or Refrigerated Whole Wheat Cheese Tortellini
  • ½ cup Shredded Parmesan Cheese
  • French Bread or Rosemary Olive Oil Bread (Costco)

Directions:

  1. In a stockpot, add EVOO, diced onion, and Italian sausage. Cook until sausage is brown.
  2. Add marinara sauce into the meat mixture and stir well.
  3. Using a whisk, stir in cream cheese until blended well. Once blended, add chicken broth and bring to a boil for 10 minutes.
  4. Add mushrooms, baby spinach, and cheese tortellini to broth and combine well. Allow to simmer for 7-9 minutes.
  5. Serve soup warm, topped with 1-2 Tbsp shredded parmesan cheese, and with a warm, crusty French bread for dipping! Enjoy!!!

I LOVE BREAKFAST!! The old saying goes that breakfast is the most important meal of the day... And if that's the case, I want to capitalize!!!

Instead of reaching for coffee to wake up my body, I reach for nutrients!!! The more living foods, live enzymes and antioxidants I can squeeze in my meal, the more ALIVE and ENERGIZED my body will be!!!

The most common excuse for avoiding breakfast is a LACK OF TIME! Well I'm here to help....

BREAKFAST BRUSCHETTA takes normal Superfood Staples and teams up for a quick, protein packed, antioxidant rich breakfast!!!

BREAKFAST BRUSCHETTA: 2 slices Sprouted Grains Bread, Toasted in Toaster 1 slice Cheddar Cheese, Cut into Triangles 2 Turkey Sausage Links, Cut into Small Pieces Organic Salsa 1 Whole Egg + 1 Egg White Organic Spinach

While bread is toasting and turkey sausage is in microwave for 30-seconds.... Cook eggs with spinach on stovetop. Eggs will take approximately 2-4 minutes. Assemble bruschetta by cutting toast in triangles, layer cheese, eggs, sausage and garnish with salsa!!! Estimated time from start to finish: 7 minutes!!!

How are you celebrating National Nutrition Month?!! What new foods have you enjoyed?!

This weekend I practiced what I preached at 1892 East (www.1892east.com) located in Huntsville, AL!! This locally owned restaurant is located in the vibrant Five Points neighborhood and is committed to purchasing locally grown food to support local farmers!!! The farm fresh ingredients really set the stage to ENJOY our food!!!!

We started off by enjoying a delectable appetizer featuring cheddar cheese from Wrights Dairy Farm (www.wrightdairy.com) located in Alexandria, Alabama. The appetizer was white cheddar cheese lightly fried and served with horseradish mustard sauce.

For an entree I enjoyed Wild Salmon served with Brown Rice Pilaf with Roasted Pumpkin Seeds and Brussels Sprouts.

To complete the meal, I enjoyed a few bites of Double Chocolate Bread Pudding with Homemade Vanilla Bean Ice Cream.

Eating for Performance - Post Workout

Eating After a Workout is called Recovery Nutrition. 

Goals of Recovery Nutrition Include: 1. Restore fluid and electrolytes (sodium and potassium) lost in sweat 2. Replace muscle fuel (carbohydrate) utilized during your activity 3. Provide protein to repair damaged muscle tissue and to stimulate growth of new muscle tissue

Nutrition for Recovery Needs to Begin Between 15-60 minutes From the Completion of the Activity.

2 Important Areas in Recovery Nutrition:

Glycogen Replacement: Consume 25-50g carbs immediately after exercise. This can be a combination of food and drink. Examples Include: Energy bar, Bagel, Whole Wheat Bread, Dried Fruit, or Fresh Fruit, Granola Bar or Low-Fat Granola Pieces.  Another option would include replacing your carbohydrate store with a sports drink if you have a difficult time eating immediately after a workout. • Re-Hydrate: Begin drinking 16oz. of water for every pound of water lost through sweat during a workout. Continue to drink water throughout the day.  Water is generally the best way to replace lost fluids. Sports drinks can help maintain your body's electrolyte balance and give you a bit more energy because they contain carbohydrates.

Eating for Recovery Will Result In:

Increased ability to Train Longer and with More Intensity

Delay the Onset of Fatigue

Improve Body Composition and Strength

Maintain Healthy Immune System

Reduce Risk of Injury

Reduce Risk of Cramps and Stomach Distress During Workouts

Arnold’s Bread now has “Healthful 10-Grain” which is a great way to get nutty, hearty bread without losing site of nutrition.  After trying 2 loaves, my husband and I both agree this bread is a keeper. I would highly recommend this bread to any of my clients, family, or friends for multiple reasons:

  • Arnold’s did a great job keeping this bread within proper portion size.
  • Each slice is equivalent to 1 carbohydrate exchange, contains 10 whole grains, and has no artificial colors, flavors, or preservatives.
  • Each slice is packed with whole wheat goodness, including 4 grams of fiber per slice!
  • Every slice is hearty and adds great texture and taste to sandwiches which helps keeps lunchtime boredom at bay
  • Each slice is packed with 5g of protein to help sustain your energy levels
  • Freezable! Does not lose taste or texture when frozen!!

Other Recommendation(s):

Add a little  color by putting Pecan Pumpkin Butter on a toasted sliced of Arnold's Healthful 10-Grain bread! Great way to add flavor and comfort to your breakfast or a great escape to enjoy for a snack! I personally like Williams-Sonoma's Pecan Pumpkin Butter which can easily be found in all stores during this time of year!

Arnold’s Healthful 10-grain bread can be found at most local grocery stores. I personally purchase this bread at Publix. I have not been able to locate this bread at Target. If anyone else finds this bread at a different location leave a comment and let us know!
